I'm trying to create a new Street, with a city that does't exists in the DB yet, so I use a Support Form. This will open the right Form:

I will create the new city entry and save it,

It appears as the Country is the right one, but when I save the new street the Country name doesn't appear in the Table:

I can fix this by editing the entry, clearing the city name Field and reentering, since it is created and it will appear in the Table.

Why isn't it updating the first time and how can I make it appear?

To guarantee the relation between countries and streets and constant update you could establish a direct relation between the street and the country, calculated by the city chosen.

Another option is in the form you can mark the form of the Cities as that forces the calculation of its countries.
